The Holiday Weekend is here!

It's the 4th of July weekend. A time when we all celebrate the nation's birthday. Fireworks, fun and food, of course! Summer holidays are my inspiration to grill. Okay, I really don't need "inspiration." I just love to grill.

Look for grilling pics and recipes this weekend. Did I mention I LOVE to grill? Oh yeah I think I did.

  1. Excited to find this blog. Tracey E-J told me about it. I love to grill and use a gas grill, a small charcoal grill, and a water smoker--depends on what I'm cooking. For steaks I use a little olive oil, kitchen bouquet for a pretty, brown color, and then quite a bit of kosher salt and fresh ground pepper (S & P added at the last minute) so the flavor of the meat comes through loud and clear. I use a really hot fire so the steaks are "black and blue"--almost black on the outside and red inside. For smoked baby back ribs and boston butt, McCormick's pork rub and for the charcoal fire under them, apple, peach, or pecan wood. The ribs cook in 5-6 hours and the pork butt cooks for a minimum of 15 until you can pull it apart--both of these cook on the water smoker so they stay moist and you rarely have to stoke the fire. Will try to find the recipe for grilled chicken wings I used (the only part of the chicken we eat bone-in) and post it cause they were really good even though the grill was a mess.

  2. Welcome and thanks for the comment! I grill with charcoal but have dreams of a gas grill to accompany it. I'll try out some of the tips you've posted here. Oh, and I'd love the chicken wing recipe...

  3. Found that wing recipe. For 7-8 lobs wings--
    Sauce:
    2 c. red hot sauce
    2 c. brown sugar
    2 T. vinegar
    stick of butter
    Combine and warm until sugar is dissolved and then put in a spray bottle.

    Seasoning:
    1/4 c. black pepper
    1/4 c. minced garlic
    1/2 c. Italian seasoning
    1/4 c. chili powder
    1/4 c. paprika
    1/4 c. dried rosemary
    2 T. ground red pepper

    Rinse wings and drain well. Pour some of the red hot sauce by itself on wings so the seasoning will stick. Toss seasoning on wings and coat generously since you'll lose some of the coating during cooking. Place on grill or smoker and cook low. After 20 minutes, mist with contents of spray bottle,flip, and then every 10 minutes after that. It'll take 1 1/2 to 3 hrs. depending on what method you use to cook them and how hot your fire is. Spend the next day cleaning your grill:). Enjoy!
